Blue Cheese Mashed Potatoes

Ingredients:
- 2 ½ pounds Yukon Gold potatoes
- 1 teaspoon salt
- ⅓ cup buttermilk
- 4 tablespoons butter
- 4 ounces Premium Blue Cheese, crumbled (and more for garnish)
- ¼ cup chives, chopped (and more for garnish)
- Freshly ground black pepper
Directions:
- Scrub potatoes and place them in a large pot. Cover with water, about ½ inch above the potatoes. Bring to a boil, then add ½ teaspoon salt. Boil for 20–30 minutes, or until the potatoes are easily pierced and the skins begin to pull away.
- Drain the potatoes. While still hot, gently wipe away the skins using a paper towel. Return potatoes to the warm pot.
- Lightly mash the potatoes with the tines of a hand mixer. Add the butter and cover with a lid so it melts, about 3–4 minutes.
- Add the buttermilk. Place the pot in the kitchen sink (to avoid splatter) and whip with by hand or with a hand mixer until smooth. Be careful not to overmix.
- Add the remaining ½ teaspoon salt, freshly ground black pepper, Premium blue cheese crumbles, and chives. Gently stir to combine.
- Spoon into a serving bowl and garnish with extra blue cheese and chives.
