Warm Brussels Sprout and Blue Cheese Salad

Ingredients:

  • 3 tablespoons butter, cubed
  • 1 bag (10 ounces) shaved Brussels sprouts (about 4 cups)
  • 2 tablespoons raisins
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 2/3 cup Kingston Breezy Blue Cheese (4 ounces), crumbled

Directions:

  • Melt the butter in a large skillet over medium heat.
  • Add Brussels sprouts and raisins. Season with salt and pepper.
  • Cook, stirring occasionally, 3-5 minutes or until the Brussels sprouts soften slightly but still keep a touch of crunch.
  • Transfer the mixture to a serving bowl and let it cool just a bit. You want the heat to soften the cheese but not fully melt it.
  • Fold in the Breezy Blue Cheese, gently stirring to coat everything in creamy, melty goodness.
  • Serve warm and enjoy immediately.
